Czech: Smazeny Syr (Fried Cheese)

(serves 4)
Ingredients:
- 4 half-inch thick slices of cheese triangles (Edam, Gouda or Hermelín)
- 1 cup all-purpose flour
- 2 eggs, beaten
- 1 cup bread crumbs
- 2 cups coconut oil
Tartar sauce ingredients
- 4 tablespoons mayonnaise
- 1 tablespoon apple cider vinegar
- 1 teaspoon mustard
- 4 gherkins (pickles), finely chopped
- 1 tablespoon capers
- ½ red onion, finely chopped
- Salt and black pepper (to taste)
Procedure:
- Make the tartare sauce: combine all ingredients in a bowl and mix well
- Heat the oil in a deep fryer or in a pan at medium/high heat until it reaches 350F
- Prep 3 bowls with the following ingredients: flour, eggs, breadcrumbs
- Dredge up to 4 slices of cheese in the flour
- Next, dip the slices in the beaten eggs until it’s wet all over
- Then completely coat the slices with bread crumbs
- Deep fry the cheese slices for about 20 seconds (or flip after 20 seconds if using a pan)
- Set aside on paper towels, then repeat with other cheese slices
- Serve with tartar sauce
